BACK TO SCHOOL 2018: WHAT SUPPLIES SHOULD YOU BUY?

Fun fact about me! I LOVE organization. I feel so much better about going to work or class when I have everything that I need, and when everything is in its place. Since I’m an organization-aholic, of course I had to stock up on some back to school supplies for 2018!

When it comes to office supplies or school supplies, my BEST tip for you is to always stock up around this time of year. There are so many great sales, and a lot of companies launch new products and patterns that are so cute! Although a lot of my work for class is submitted online, I still always love to have some school supplies laying around. Even if I don’t use everything right away, as the year goes on I always end up utilizing my supplies.

This year, I did all of my back to school supplies shopping at Target. My favorite brand of school supplies is Yoobi. For every Yoobi product you buy, they donate one item to a U.S. classroom in need. Now, that’s enough reason for me to pick up some school supplies!

HEALTHY AND GLUTEN FREE BLUEBERRY MUFFINS

I’ve always loved blueberry muffins! They’re so delicious, perfect to eat on the go, and remind me of my childhood. The problem with most muffins is that they contain SO MUCH SUGAR! I’ve also noticed that a lot of “blueberry muffins”, don’t actually contain real blueberries. Weird, right?

With this being said, I had to create a recipe that was healthier and gluten free! These muffins are such a tasty treat, bursting with fresh blueberries in every bite. They aren’t overly sweet, which is how I prefer them! These muffins are perfect to make this time of year, since blueberries are in season and on sale.

HEALTHY, GLUTEN FREE BLUEBERRY MUFFINS

What you’ll need:
2 cups rolled oats, blended or processed into a fine oat flour
2 tsp baking powder
1/4 tsp salt
2 large eggs
3/4 cup nonfat, plain greek yogurt
1/4 cup coconut sugar
2 tsp vanilla extract
1 and 1/2 cups fresh blueberries
Aluminum lined cupcake holders

Directions:
1. Combine your oats, baking powder, and salt in a small bowl. Make sure your oats are processed into a flour consistency.
2. Whisk together your eggs, greek yogurt, coconut sugar, and vanilla extract in a larger bowl.
3. Gently mix your dry ingredients into your wet ingredients.
4. Fold in your fresh blueberries. Make sure to remove any stems on the fruit.
5. Line a muffin tin with aluminum lined cupcake holders. The aluminum lined muffin tins work best for this recipe, because the greek yogurt is very sticky.
6. Bake your muffins for 16-18 minutes in a 350 degrees oven. This recipe should allow for 12 muffins.
7. Allow to cool and enjoy! After the muffins have completely cooled, I recommend storing them in the refrigerator since they have a decent amount of greek yogurt in them. Before serving, allow the muffins to come to room temperature or warm them up in the oven/microwave!

REDUCED GUILT, GREEK YOGURT CHEESECAKE

I think the title of this blog post says enough. If I can eat a slice of cheesecake that doesn’t make me feel bad about treating myself, then count me in! I’ve seen this recipe floating around the internet, so I decided to give it a try. It ended up being a success!

The only dairy that this cheesecake contains is fat free, plain greek yogurt- which is one of the only dairy products I consume on a daily basis. The greek yogurt helps make the cheesecake light and airy, while still allowing for a similar consistency to regular cheesecake.

REDUCED GUILT, GREEK YOGURT CHEESECAKE

What you’ll need:
3 eggs
3 TBSP coconut sugar
1 TBSP vanilla extract
3 cups fat free, plain greek yogurt
1 box of Jello sugar free cheesecake pudding mix
Cooking spray

Directions:
1. In a large mixing bowl, whisk together your eggs and sugar.
2. Next, combine your yogurt and vanilla extract with the eggs and sugar.
3. Finally, mix in your box of Jello pudding mix.
4. Grease a 9 inch round cake pan with cooking spray, and fill the pan with your mixture. Try to make the top of your cheesecake as even as possible.
5. Bake the cheesecake for 25-30 minutes at 350 degrees. You’ll know your cheesecake has finished baking once it looks set, but still slightly jiggly.
6. Allow the cheesecake to cool completely, and then let it set over night in the refrigerator.
7. Enjoy! I like to serve mine with fresh strawberries.

1. Cinnamon

These were by far the best flavor of Smartcakes! They tasted like little cinnamon breakfast muffins. Paired with coffee, this would make a great breakfast or mid-morning snack.

2. Tangerine

The tangerine flavor was not what I was expecting, but it was very good! This flavor reminded me of sweet Fruity Pebbles cereal. I really enjoyed this flavor!

3. Lemon

Similar to the tangerine Smartcakes, the lemon Smartcakes tasted fruity with a hint of lemon. I enjoyed these almost as much as I enjoyed the tangerine Smartcakes.

4. Coconut

I love coconut flavored treats, so I was a bit let down with the coconut flavored Smartcakes. These tasted very plain with the smallest hint of coconut. I wish these had unsweetened coconut shreds in them, or something to make the coconut flavor stronger.

5. Chocolate

I am a chocolate fanatic, so these chocolate Smartcakes did not do the job for me. They tasted like artificial chocolate cupcakes, so I was very disappointed. Out of all of the flavors, I wouldn’t purchase this one.

GLUTEN FREE, GRAIN FREE, AND REDUCED GUILT CHOCOLATE CHUNK BROWNIES

There are a few things you should know about me…

1. I have a thing for dark chocolate.
2. I mostly eat a gluten free and dairy free diet, due to stomach sensitivities.
3. I love to bake, but I hate feeling guilty about indulging in a sweet treat.

If you’re anything like me, than this brownie recipe will SAVE you! Not only is this recipe delicious, but you seriously don’t have to feel bad about treating yourself. My recipe contains half of the amount of sugar as regular brownies, AND is free of wheat, gluten, butter, and oil. If you’re in the mood for a sweet, fudgy, and chocolatey treat- I’ve got you covered.

GLUTEN FREE, GRAIN FREE, AND REDUCED GUILT CHOCOLATE CHUNK BROWNIES

What you’ll need:
3/4 cup cacao powder (not to be mistaken with cocoa powder)
1/2 cup almond flour
1/2 tsp baking powder
1/4 tsp salt
1/4 tsp instant coffee
1/4 cup almond butter
2 eggs
2 tbsp unsweetened applesauce
1 tsp vanilla extract
5 tbsp cane sugar or maple syrup
1/2 cup dark chocolate chips

Directions:
1. In a mixing bowl, whisk together your wet ingredients (almond butter, eggs, applesauce, vanilla, and sugar).
2. In a separate bowl, combine your dry ingredients (cacao powder, almond flour, baking powder, salt, and instant coffee).
3. Add your dry ingredients to your wet ingredients, and mix thouroughly.
4. Gently fold in your dark chocolate chips.
5. Grease an 8″x 8″ pan with nonstick spray, and bake your brownies in a 350 degrees oven for 15-20 minutes.
6. Allow to cool and dig in! I love serving these with some fresh strawberries.
